At Finca Medina, Bourbon and Caturra are always harvested and processed together. The farm works them in different ways: natural, washed and black honey.

For this lot, we chose black honey. The skin of the cherry is removed, while the mucilage stays on the bean as it dries. Rich in sugars, it brings sweetness, depth and complexity to the cup, while keeping the acidity elegant and the profile clean.

Roasted for filter, but surprisingly complex and elegant as an espresso.

Powerful flavour, with clarity. Notes of black cherry, blackberry and clove.

Filter recipe.
Method: Hario V60 02 (acrylic)
Dose: 20 g coffee
Water: 320 g , Lanjarón
(1:16 ratio)
Temperature: 90 °C
Grind: medium, like coarse salt
Total time: 2:20 – 2:40

Pouring
Bloom: pour up to 60 g at 30"
First pour: up to 140 g at 50"
Second pour: up to 200 g 70"
Third pour: up to 260 g at 90"
Final pour: up to 320 g 120"

In the cup
Expect sweetness and depth with a clean, elegant acidity. If it tastes sharp or thin, grind a little finer. If it feels heavy or dry, go a little coarser.
